This version of this classic dessert came from a cooking class. It turns out to be the same recipe as Arlene Teti's grandmothers and it ranks right up there with some of the best we have eaten. We have tried this classic in almost every town in Italy!

Tiramisu

This will serve 4-6 persons

Ingredients

  • five (5) egg yolks
  • 100 grams sugar
  • 2 tablespoons orange brandy liquor
  • 1 cup mascanpone cheese
  • 2 cups whipping cream
  • six (6) ounces espresso coffee
  • three (3) ounces Kahlua liquor - or three ounces of Brandy
  • 12 lady fingers

Method

  1. Whisk the five (5) egg yolks, with 100 grams of sugar and two (2) tablespoons orange brandy and a few drops of water over a bain-marie (double boiler) until white and fluffy. Beat in the cheese until the mixture is smooth. Let this mixture cool.
  2. Whip the whipping cream and then fold the cheese-egg mixture into the whipped cream. Take care not to over beat the cream.
  3. Lightly drop the lady fingers into a chilled blend of espresso and Kaluha Layer the lady fingers and cream
  4. Chill for four (4) hours in the fridge or two (2) hours in the freeze. Dust liberally with Cocoa powder.
