In my kitchen...

Notes

From the setting of the table, the cooking and the presentation

The details of presentation are the foundation for serving and plating meals.

The details start with the planning of the table, setting the tableware, cutlery and glassware and then the plating and presentation of the food. My friend and accomplished chef, Chris Grant, always has those points down pat.

The setting of the table is one way to lay out a map for the meal to come.

One of the most common questions: which is my bread & butter plate"? The bread and butter plate is always to the left of the plate, the coffee/tea cup to the right.) I actually came across this reminder in an article in Hotel Online: "Drink has five letters and so does right. So your beverages are on your right-hand side" . "Food has four letters and so does left. So your bread plate is on your left."  Hope that helps. Haven't we all sat at tables at large events where everything is so packed in it can be hard to keep track of who has what.
