Parmesean-Blue Cheese Toasts with Green Onions

This has turned out to be one of the hits of 2004! Easy to make and so good, especially with a glass of red wine.

1 cup mayonnaise
2 large garlic cloves, minced
1/2 teaspoon ground black pepper
1/8 teaspoon cayenne pepper
1 1/2 cups freshly grated Parmesan cheese (about 5 ounces)
3/4 cup finely crumbled blue cheese (about 3 ounces)

28 1/3-inch-thick diagonal bread slices cut from 2 french baguettes
Olive oil

3/4 cup finely chopped green onions

In a medium bowl combine the mayonnaise, minced garlic, ground black pepper, and cayenne pepper and mix well. Then add the cheeses; season with salt. This can be made the do or so ahead and cover and fridgerate.

Heat oven. Brush 1 side of each bread slice with oil and put under the broiler for a few minutes until the sides start to take on a golden colour. Remove, and then add a spoon of the cheese mixture. Return to the oven until cheese topping starts to bubble and toasts are golden at edges, about 5 minutes or so. Transfer toasts to large platter. Sprinkle with chopped green onions and serve warm. Makes about 28.
