Prawn Martini

AmalfiA started course with great colour and taste - starts an expectation for what is to follow! This will do for good sized martini for 12 or so guests. Pictured here to the left is the first state, layering the martini glass with red, yellow and orange diced peppers.

The Base

Play in the bottom of a martini glass a layer of fine diced red, orange and yellow peppers. Sprinkle with a tablespoon of finely diced red onion. Add a sprig of dill.

The Shrimp

Saute the following mixture in a pan.

40 large shrimp, peeled
4 tbsp extra virgin olive oil (60 ml)
4 cloves garlic, minced
2 tsp hot red pepper flakes (10 ml)
2 tsp coarse salt (10 ml)
Fresh parsley, chopped for garnish

Sauce

2 tablespoons Dijon mustard
4 tablespoons Gorgonzola cheese
1 teaspoon lemon juice
2 tablespoons white wine vinegar
olive oil
salt & pepper

Using a whisk, mix the blue-cheese, mustard, lemon juice, then slowly add the olive oil to taste. Final taste adjustment with salt & pepper.

Add the olive oil, garlic, red pepper flakes, when oil is hot add the shrimp and cook for one minute on each side.

Serve

Place the shrimp on top of the dices peppers, drizzle the blue-cheese sauce over and serve.
